- 1 finely diced onion
- 1kg chopped butternut
- 1 and half stock cube
- 450ml boiling water
- 2 teaspoons shaved biltong
- 1 clove crushed garlic
- 250ml cream
- Lightly brown onions in large pot.
- Dissolve stock into the boiling water and add to the onions.
- Add Butternut and bring to boil.
- Simmer until butternut is tender.
- Add biltong shavings and garlic.
- Blend until creamy.
- Stir in cream.
- Serve sprinkled with more biltong shavings.
