Butternut and Biltong Soup made easy

  • 1 finely diced onion
  • 1kg chopped butternut
  • 1 and half stock cube
  • 450ml boiling water
  • 2 teaspoons shaved biltong
  • 1 clove crushed garlic
  • 250ml cream


  1. Lightly brown onions in large pot.
  2. Dissolve stock into the boiling water and add to the onions.
  3. Add Butternut and bring to boil.
  4. Simmer until butternut is tender.
  5. Add biltong shavings and garlic.
  6. Blend until creamy.
  7. Stir in cream.
  8. Serve sprinkled with more biltong shavings.
